Ingredients

312g Trinity PureForm Meringue 

180g icing sugar 

180g sifted almond flour 

Trinity PureForm Meringue

For 312g Trinity PureForm Meringue, you need: 

200g Trinity PureForm 

112g Water 
Optional flavourings. 

FRESH AS Freeze-dried fruit powder: 5 g recommended  

Colouring or Flavour Essences as desired 

Method  

Add Trinity PureForm & Water to a bowl and whip to strong peaks 

Add sifted almond meal and icing sugar, gently fold through (***DO NOT OVER MIX***) 

Pipe desired size 

Dry for 15 – 20 minutes or dry to touch 

Bake @ 145 °C 16 minutes fan bake (Low Speed) 

For dried meringues, use base recipe & dry min: 3 hours or as per your normal process.

Buttercream

Option 1 

100g Trinity PureForm 

56g Water 

140g Unsalted butter (soft, toothpaste consistency) 

 

Method 

Whip Trinity PureForm + water to stiff, glossy peaks (≈ 7 minutes) 

Change to the paddle 

Reduce to medium speed 

Add soft butter in 3 – 4 parts 

Continue mixing on high speed until fully incorporated after each addition 

Beat until smooth, silky, and fully emulsified 

*If in the rare case the mix splits, use a blow torch, heat the bowl & it will recover. 

Flavour with Vanilla, Chocolate, Coffee or your desired flavour like a normal buttercream 

You could flavour the meringue, and it will flavour the full buttercream 

 

Option 2 
(If you have excess Trinity PureForm Meringue) 

100g Trinity PureForm Meringue Mix  

90g Unsalted butter 

Proceed from step 2 above 

Pavlova

100g Trinity PureForm 

56g Water 

3g Cornflour 

(Optional) FRESH AS Freeze-dried fruit powder: 5g recommended 

Method  

Add Trinity PureForm + cornflour + (fruit powder) + water together 

Whip to stiff peaks 

Shape pavlova 

Bake low & slow @ 90 °C for approx. 1 ½ – 2hrs or as desired 

Marshmellow

100g Trinity PureForm 

56g Water 

8G Gelatine powder 

40g Cold water 

Option flavourings. 

FRESH AS Freeze-dried fruit powder: 5g recommended  

Vanilla Bean Paste or Essence 

Method  

Bloom gelatine in cold water 

Whip Trinity PureForm mix to full volume 

Melt gelatine, stream in while whipping 

Pipe, Pour into dusted frame or process as desired 

Set 4–6 h (or overnight), cut, coat 

Dusting or finishing suggestions 

25g Icing sugar 

25g Cornflour 

Desiccated Coconut
